Très déçu, il a bon goût mais il n'y a presque que du gras. Largement les trois quarts de gras.

Bonjour, quand il s’agit d’un véritable jambon ibérique on récupère de moyenne un 38% du poids total. Le reste correspond à l’os et le gras qui s’infiltre et qui protège le jambon pendant son affinage de 30 à 36 mois. Ce gras est un gras spécial riche en acide oléique.
