What makes Iberian ham unique?

The dehesa: paradise for Iberian pigs
The dehesa is a unique ecosystem stretching across Extremadura, Andalusia, and Castile. During the montanera (from October to March), Iberian pigs roam up to 14 km a day in search of acorns, consuming between 6 and 10 kg daily. This intense exercise and diet rich in oleic acid create the precious infiltrated fat characteristic of Iberian ham.
The artisanal curing process
Curing can last between 24 and 48 months for the finest Iberian hams: salting with sea salt, resting in cold chambers, drying in natural drying rooms, and a long cellar maturation where the ham acquires its definitive character.
How to recognize a quality Iberian ham
- The hoof: Must be black or very dark — hence the famous name “pata negra”.
- The fat: Soft, yellowish, and buttery to the touch in acorn-fed hams.
- Tyrosine crystals: Small white dots in the cut, a sign of excellent curing.
